Scrambled Cauliflower


Scrambled Cauliflower

Serves 2-3

1 cauliflower head

2 tbsp vegetable or olive oil (or cooking oil of your preference)

2 tbsp finely chopped red onion

3/4 cup vegetable broth

Spices of your preference: I used garlic powder, chili powder, and onion powder

Salt and pepper

Cut around base of cauliflower head to remove stem

Chop cauliflower into small pieces

Cook cauliflower and red onion in oil over medium heat for 2-3 minutes

Add vegetable broth, allow it to get fully absorbed into the cauliflower, about 10 minutes

Stir often

Lower heat and cover to allow the cauliflower to fully cook thoroughly and soften, about 5-10 minutes

Check often with a fork to see when it is ready, it's ready when you can easily pierce a fork through them

Tasty, healthy alternative for scrambled eggs. Enjoy your delicious breakfast of scrambled cauliflower!
